Salesforce to mysql - how to duplicate schema from SalesForce?

I have a project where I need to take our entire SalesForce schema and copy it to a mysql database. Where it gets interesting is that I need the TOS job to create the database and tables in Mysql - I won't have knowledge of the schema in advance, and if someone changes something on the SalesForce side, my TOS job needs to be able to create the same changed schema on the mysql side, without having to change the job.
Any suggestions, tips, ideas?

The tMySQLOutput component has many options, including "drop table if exists and create" and can create the table definition based on your input.
You'll probably want to pre-create at least the database.

Thank you! That option, if it works for all of our schemas on salesforce, would be exactly what I need.
