Creation of an historical sequence in talend jobs (Enterprise version)

 Hello community:

 

I have a requirement to create sequence in talend.

Basically records are coming from a source table. I have to use a row that has a datetime type record as my main source.
Everyday we have new records since we use transactional data, this job that I want to create, needs to pick the last change or transaction based on the datetime data and put it into some kind of new file, then go to the cloud when the "bus" is filled with the new records.

Since I already have a dynamic column, I want to know if I need to use another one (because I know you can only use one per job), or if there's another way to make my "dream" come true.
